I have been promoting Indian Cuisine in 8 different countries till now but still there was something that needed to change the perspective towards Indian Food. We choose to trek Everest and serve Indian Cuisine on the highest peak, says Chef Sanjay Thakur.
These Two Chandigarh-based young professionals have brought laurels to City Beautiful by establishing a Guinness World Record on the Island Peak (Imja Tse, Nepal) of Mount Everest. The world record was made by Chef Sanjay Thakur, an Etihad Airways professional from Chandigarh, and Chef Sunder Rajan Palaniappan of the Mahindra Group, on 30th May, 2018 at 11 am by opening ‘Triyagyoni’, the highest altitude pop-up restaurant for fine dining Indian cooking at such a remote and highest spot. Rajesh Kumar Yadav, a young photographer from Chandigarh, captured the historic moments in his camera.
Chef Sanjay said, “I have heard people that say trekking Everest is a horror story. Now we both get the point why it was a horror thing for them. It was most difficult thing to do but we are glad that even nature helped us in our journey.”
Explaining further he said, “We used all natural things including Solar Energy, local ingredients, NAK milk and local spices for the cooking. Other chef helped us in preparation. 10 people from Nepal were chooses for Fining dining 3 course meal. Our expedition was supported by the Indian Federation of Culinary Associations. In the supervision of the Guinness Book of World Records, we did fine dining Indian cooking at the highest altitude using natural fuel and resources.”
Rajesh Yadav, having done photography for some of the reputed media organizations in the city for the past 17 years and now a successful entrepreneur who runs his own photography venture ‘Colors Art’ shared his experience and said, “We started trekking from a place named ‘Lukla’ and it was 70 kns distance that we covered. We made a restaurant in tent and Chef started cooking in freezing conditions. But this journey is something that we are proud to achieve.”
Guinness Everest Expedition was also supported by the Mansha Educational and Charitable Trust. Manoj Chandel, President of the Mansha Trust said, “My heartiest wishes to Rajesh Yadav and the entire team for successfully establishing the Culinary World Record at the highest spot.”
